The Altopiano dei Sette Comuni is a delicate and sheltered environment, where since centuries men has been expressing attention and respect for biodiversity. Mountain pastures of the Altopiano have a greater variety of grasses than low land pastures. Of course, these grasses give a quality and healthy wealth you can find in our cheeses.

The grass and hay of the Altopiano, used for cow feeding are biologic as they come from meadows and pastures traditionally fertilized with natural substances. The cow feeding is guided by a severe nutritional protocol based on pasture green grass, hay, and the possible integration with NON-GMO cereals.

Moreover, it’s forbidden to use silages and fermented materials. All this allows us to obtain a milk with superior organoleptic characteristics which is particularly apt to produce cheeses of great value.
